Movement was pretty good today. Got to the gym and walked on a different eliptical. I'm not sure I liked it as much as the true rider. My ankle definitely didn't - it has more strain on my ankles then the other one.
Food:
Breakfast: 2 slices raisin toast with earth balance spread
Missed my snack today - just got busy and by the time I thought about it it was close to lunch
Lunch: Healthy choice Pumpkin Squash Ravioli. This wasn't half bad for a frozen microwave meal. I just don't like the salt content - 600 mg. Followed with 3 almond cranberry vanilla nut clusters.
Snack: 1 bottle Naked juice strawberry banana - I didn't get a picture of this one today.
Dinner: Spanish omelet - now I know this is not truly Spanish, but its what I grew up calling it from what my parents called it. (recipe below)
Dessert - 1/3 of a chocolate eclair

30 minutes on eliptical at the gym.
Recipe
1 can of peas drained
1 can of diced tomato
1-2 strips of bacon cut into small pieces
1/2 - 1 onion (depends on how much you're making and your preference) diced
1-2 T of white wine
1-2 T of Worcestershire sauce
2 eggs (per person)
salt and pepper to taste.
This makes enough for at least 3 servings
Cook down the bacon and render the fat. For one person I just use 1 slice of bacon. Remove the bacon pieces when they're done cooking and reserve on the side. Add the onions to the pan and cook until softened. Add the white wine to deglaze the pot. There really isn't any liquid left after you add it and you don't get a wine flavor to the sauce. I just wanted to deglaze the pan. You could use water if you wanted to. Add the tomatoes (including the juice) and the peas. Add Worcestershire sauce (this is optional, I added it b/c my tomatoes tasted a bit sweet/tart and I wanted something to cut that.) Let simmer.
In another pan, make an omelet with the egg - fill with the tomato pea mixture and top with some of the mixture as well. I always fail when it comes to omelets so I just scramble the eggs and top with the tomato pea mixture.
