Day 26

I updated days 24 and 25.

Today was a tiring day.  I went to town because I had to run some errands and I was meeting for my appointment to set up a weight program.  They're starting me on just 6 machines, but I think that's good for now - at least until I get into a more stable schedule.  I also went to a local school supply store and they had a whole package on mypyramid.gov which is perfect for my nutrition board display that I want to do. 

After I hit Walmart and I got home, I looked around and decided maybe I really needed to clean the driveway.  Now mind you, although I've lived in a climate where snow occurs from time to time, I have never shoveled my driveway - when I lived in an apartment, someone else did it and all the past times it wasn't really enough to bother with.  Wow, I do not like shoveling the driveway.  I conquered the driveway, but in the end - with the way that I feel - I think it conquered me.   I'm wiped out.  It was great exercise though - I was sweating my ass off.  I know its probably not healthy, but I started in my winter coat with gloves and a scarf and ended the shoveling in just a sweatshirt and gloves. 

Food:
Breakfast - 1 cup Raisin Bran Crunch with 1 cup 1% milk (thought I had a picture of this, but I don't)
Lunch - Pickelman's meatball sandwich (meatballs, marinara and cheese) on wheat with a pickle as a side (huge ass pickle, ate about 1/4th of it) and iced tea with splenda and lemon.
Snack - 1/2 cup of chocolate chex mix
Dinner- homemade onion soup with 3 slices of a baguette with a bit of gruyere cheese and a salad of baby field greens, 1/4 of a pear, 2 T of dried cranberries, 1 ounce of blue cheese and vinegrette.  (recipes below)
Dessert - Chocohotpot with sugar free whipped cream

Movement:
20 minute walk at the gym - moderate pace
Shoveling the driveway clear of snow.

Recipes:
Onion soup -
2 onions sliced into half moons
1/2 bottle of beer of your choice - I had a local winter brewed beer
2 cups beef broth
thyme
salt and pepper
2 T butter
2 T olive oil

In a pot heat the butter and olive oil.  Add the onions, the thyme and a pinch of salt.  Cook the onions until they caramelize - become brown in color - this takes some time, but its well worth it in flavor.  Slowly add beer to deglaze the pan until its all added.  Add the beef broth and simmer until ready to serve.  You want the flavors to meld.  Add salt and pepper to taste.

Vinegrette
(I don't have proportions here unfortunately)
Used 1/2 shallot
White balsamic vinegar
1 spoonful of dijon
salt and pepper to taste
olive oil

I like my vinaigrette a bit more tart/tangy so I don't use as much oil so the vinegar and oil amounts are up to your preference.   This was really good with the salad. 

Chocolate hot pot
4.5 ounces semisweet chocolate
8 T Butter
3/4 c sugar
1/4 cup flour
3 eggs

melt chocolate and butter (I do this in the microwave)  Mix together eggs, sugar and flour.  Combine the two mixtures and then pour into butttered ramekins.  Bake at 400 degrees for 10-12 minutes.  (I only bake one and put the others in the fridge covered with saran wrap.)
