EC - day 2

So I woke up later then planned this morning and was just exhausted and feeling rather cruddy. I couldn't figure it out, I am not supposed to feel this way eating this healthy - well I figured it out - monthly visitor. I don't get it often due to the bc I'm on but when I do get it ugh. Anyways, I'm glad I know why I'm so tired.

Today went a bit more smoothly for me.

Meal 1: picante frittata - left over from yesterday morning - with 1 slice of whole grain bread dry.

Meal 2: yogurt with 1 tsp honey, blueberries and 1/2 cup granola (clean granola - I like the bare naked granola, but I think I need to write down the recipe in the Eat clean cookbook at the book store for her eat clean granola). I had this with 1 cup of mint and lemongrass green tea with 1 tsp honey

Meal 3: paradise burger on sprouted grain bun with lettuce, tomato, onion and yogurt cheese. Had this with a side of corn and black beans with a squeeze of lime juice

Meal 4: 2 egg whites and a kiwi

Meal 5: Thai Basil Chicken Fried Rice - this was way spicy - I need to cut back on the chilies the recipe calls for. it has chicken, brown rice, shallots, spring onions, garlic, thai basil (which I left out as I did not have), 2 thai chilies (I used serranos since I can't get Thai chilies), cilantro, oyster sauce and fish sauce and a little salt (1/2 tsp sea salt).

Meal 6: 1 apple with almond butter (all natural, just unsalted almonds ground up)

No exercise today - its my rest day. I did clean out and organize the bathroom closet and I cleaned the toilets, but it wasn't too strenuous really.

Tomorrow is first day on diet at work. 4 of my 6 meals will be eaten there, so it will be interesting to see how smoothly it goes.

I'm really enjoying - I don't feel hungry and I don't feel overly stressed about what I can and can't eat. I am also finding her recipes really enjoyable taste wise and easy to make. I have to say, my favorite so far, the paradise bean burgers - I'd never really had a bean burger I liked til now. Only thing is they do fall apart a bit.
